Belizean BBQ Chicken

A popular, simple, and delicious way to prepare a whole chicken. Variations of this recipe are used by street vendors, restaurants, parties and everyday family dinners.

  • 1 Chicken
  • 1 ball - Recado
  • Limes
  • Bitter Orange Marinade
  • Lea Perrins - optional


  1. The first step to making a Belizean BBQ Chicken is important to many Belizean Chicken recipes: washing the chicken. Rub the chicken with sour oranges (if available), and allow to sit in lime water.
  2. Quarter the chicken, and cut up.
  3. Mix red recado with a little water, pour over chicken. Many people also add 1/4 cup Lee Perins. Coat chicken well. Allow to marinade for at least 30 minutes and up to 24 hours in a sealed refrigerated container.
