Bread Pudding

Belizean Bread Pudding has an sweet, elegant flavor with a custard-like texture toward the bottom, and a crisper texture toward the top.

Belizean Bread Pudding

Prep Time: 30-40 minutes
Cook Time: 1 hour 20 mins
Yields: 12 servings

Ingredients

  • 3 cans - condensed milk
  • 3 cans - evaporated milk
  • 1 teaspoon - lemon extract
  • 5 eggs
  • 1 small loaf of white bread, or 1/2 a large white loaf

Preparation

  1. Combine condensed milk, evaporated milk, lemon extract, and eggs in a bowl. Whisk until consistency is smooth.
  2. Cut your bread into cubes that are approximately 1" x 1", and place in a large shallow baking dish (9x13 works well). Pour liquid mixture over bread. Make sure every piece of bread is fully coated, use your hands to press down any bread that isn't. Allow the mixture to sit on your counter for 20 minutes or so.
  3. Place in a pre-heated 350 degree oven for about 1 hour and 20 minutes.
  4. Place in a pre-heated 350 degree oven for about 1 hour and 20 minutes. Check halfway through, poke several holes with a knife to allow bottom to cook well.
  5. Cut into squares and enjoy!
