Conkies also known as “Konkees” are the sweeter cousin of the tamale and are enjoyed throughout the Caribbean. A festive treat savored during celebrations, Conkies are a delightful blend of spices, fruits, and sweet potato, wrapped in banana leaves and steamed.

Belizean Conkies Recipe Ingredients:

  • 3 lb (1.36 kg) Cornflour
  • 12 oz (340 grams) Raisins
  • 1 lb (453 grams) Sweet Potatoes (optional)
  • 2 tsp (10 grams) Spice Mix
  • 2 tsp (10 grams) Grated Nutmeg
  • 1 tsp (5 grams) Vanilla Essence
  • 1 tsp (5 grams) Salt
  • 2 Large Eggs
  • 1 Large Coconut, grated
  • 1 cup (240 ml) Milk
  • 2 cups (480 ml) Water
  • 2.5 lb (1.13 kg) Pumpkin, grated
  • 8 oz (226 grams) Margarine
  • 2 oz (56 grams) Lard
  • 1 tsp (5 grams) Almond Essence
  • 2 lb (907 grams) Sugar
  • Young Banana Leaves

Instructions:

  1. Prepare Banana Leaves: Wipe the banana leaves clean, remove the central stem, and lightly singe them over a low flame. Cut into 6-inch squares.
  2. Set Up Steaming Pot: Fill a large pot with water (about a quarter full, approximately 3 pints). Place the banana leaf mid-ribs at the bottom to create a rack. Cover with some banana leaves and bring the water to a boil.
  3. Mix Ingredients: In a large mixing bowl, grate the pumpkin, sweet potatoes (optional), and coconut. Melt the margarine and lard together. In a separate bowl, beat the eggs and mix with milk. Combine all ingredients, including spices, sugar, and essences, into the large bowl. Mix thoroughly to create a uniform batter.
  4. Assemble Conkies: Place spoonfuls of the mixture onto the banana leaf squares. Fold the leaves to encase the mixture securely.
  5. Steam Conkies: Place the wrapped Conkies on the prepared rack in the steaming pot. Steam until they are firm and cooked through, checking periodically.
