Cooking Time: 1 to 1 1/2 hours

Serves: 6

Ingredients:

  • 8‐10 medium to large crabs
  • Salt and pepper, to taste
  • 2 tbsp flour
  • 1 1/2 tsp lard
  • 2 small cocos (taro root), peeled and diced
  • 1 small onion, sliced
  • 1 green pepper, sliced (optional)
  • 1/4 tsp thyme
  • 1 carrot, peeled and sliced
  • 2 large green plantains
  • 1 cup coconut milk

Instructions:

  1. Prepare the Crab: Remove claws and legs, wash thoroughly with a brush, then break the shell to remove the meat. Separate the back and the underside, discarding the back. Wash the underside, and crack, and remove some of its shell. Season the crab meat and pieces with a little salt and pepper. Set aside.
  2. Make the Roux: In a large pot (Amazon), heat the lard over medium heat. Stir in the flour until it is blended and turns brown. Gradually add 2 cups of water, stirring constantly, until the mixture is smooth. Add the onion, thyme, whole green pepper, and 1 tsp salt.
  3. Cook the Crab: Add the seasoned crab meat to the pot, along with enough water to cover all. Bring to a gentle boil and simmer for 30 to 45 minutes.
  4. Prepare the Vegetables: While the crab is simmering, prepare the coco (taro root)(Amazon) and carrot.
  5. Make Matilda Foot: Peel the green plantains and mash them into a thick, dough-like consistency. This is your Matilda Foot.
  6. Combine: Add the Matilda Foot, diced coco (taro root), and sliced carrot to the stew while simmering. Let it simmer until the vegetables are almost tender.
  7. Final Touches: Stir in the coconut milk and simmer for an additional 10 minutes. Taste and adjust the seasoning if needed.
  8. Serve: Serve hot with a bowl of white rice, allowing the comforting flavors to envelop you with every bite.
