How to make Belizean style waffles at home
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the coconut milk, lime juice, oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Transfer the batter into a jar or container, cover, and refrigerate overnight or for at least 2 hours to rest.
