Pirix P’aak is a traditional Belizean breakfast dish influenced by Maya culture. This flavorful egg dish, cooked with tomatoes, onions, and peppers, is perfect for starting your day with a taste of Belize. Try pairing it with freshly heated tortillas or bread for a complete meal. Pirix P’aak is also sometimes spelled Pirishpak or Pirix Paak.

Belizean Pirishpak – Eggs with Tomato Recipe:

Mayan Pirix P’aak Recipe

1. Prepare the Ingredients:

  • Chop the onion, tomatoes, and peppers. Remove the seeds from the habanero pepper to reduce the heat.

2. Sauté the Vegetables:

  • Heat the olive oil in a large frying pan over medium-high heat. Add the chopped onions and cook them until they become translucent about 1-2 minutes.
  • Add the chopped tomatoes and peppers to the pan, along with a shake of salt. Cook the mixture for a few minutes until the tomatoes are mushy and some moisture has evaporated.

3. Cook the Eggs:

  • Crack the eggs directly into the pan with the tomato mixture. Add a pinch of salt.
  • Allow the eggs to settle among the tomatoes as the egg whites begin to change color. Gently stir the mixture with a spatula to incorporate the eggs into the tomato sauce, lightly scrambling them.
  • Continue to scramble slowly until the eggs are fully cooked and incorporated into the tomato sauce.

4. Serve:

  • Remove the pan from the heat when the eggs reach your desired consistency. If using a cast-iron pan, transfer the eggs to a serving bowl to prevent overcooking.
  • Sprinkle the chopped fresh cilantro over the eggs. Serve immediately with bread or heated tortillas.
