Belizean Recado Pork Steaks Recipe Instructions:

  1. Preparation: In an extra large mixing bowl rinse the pork steaks with vinegar, pat dry, and rub with the mixed seasoning (excluding sweet peppers and onions).
  2. Sauté: Heat oil in a skillet, sauté onions and sweet peppers until onions are translucent, then remove from the pan.
  3. Browning: In the same skillet, brown the pork steaks on both sides.
  4. Simmering: Add red recado, vinegar, and enough water to cover the steaks. Cover and simmer on low heat until tender, about 1 ½ hours.
  5. Final Touch: Return the onions and sweet peppers to the pot. Optionally, add potatoes and green peas in the last 20 minutes of cooking.
