Boil Up is among Belize’s most beloved dishes, alongside Rice and Beans with Stewed Chicken and Hudut, a famous Garifuna food made from fish and coconut stew with mashed plantains. These dishes highlight Belize’s culinary diversity, with Boil Up featuring a mix of ground provisions like yam, cassava, and plantains, common in Garifuna cooking.

Belize Boil Up Ingredients

  • Fish (steaks or larger chunks): 2 lbs
  • Pigtails (cut into 3-inch pieces): 1 lb (Pigtails are available on Amazon)
  • Small piece of salted pork (diced): 1
  • Eggs: 2
  • Yam: 1
  • Cassava: 1
  • Large sweet potatoes: 2
  • Ripe plantains: 2
  • Green bananas: 4
  • Onion: 1
  • Tomatoes/can of diced tomatoes: 3
  • Baking powder: 2 teaspoons
  • Water, pepper, and salt to taste
  • Flour: 4 cups (for boil cakes)

Directions for Preparing Boil Up

  1. Boiled Cakes Preparation:
    • Combine flour, baking powder, and water to form a soft dough.
    • Divide the dough into three-inch balls and flatten each.
  2. Tomato Sauce Preparation:
    • Sauté onions, then add diced tomatoes.
    • Season with salt and pepper to taste. (Keep in mind pigtails are very salty, so go easy or skip salt until later).
  3. Preparing Ground Food:
    • Peel yam, cassava, and sweet potatoes.
    • Chop them into three-inch chunks.
    • Remove the skin of green bananas and slice them.
    • Peel ripe plantains and chop them into cubes.
  4. Boiling Process:
    • In a large pot, fill with water and bring to a boil.
    • Add pigtails and cook for about 30 minutes to soften and remove some of the salt. You may prefer to boil your pigtails, dump the water, and then boil them again to remove more of the salt content.
    • Once the pigtails are ready remove them from the water and reserve them for later.
    • In a pot with fresh water, add the coconut milk and bring to a boil.
    • Add chopped ground provisions, green bananas, and plantain cubes.
    • Cook until tender.
    • A few minutes before they are cooked, place the boiled cake dough in the water.
  5. Cooking Fish and Eggs:
    • After removing the boiled items with a slotted spoon, add raw fish chunks to the pot.
    • Cook until the fish starts to become tender. Some prefer to season the fish with salt and pepper before adding it to the pot.
    • In a separate pot hard boil the eggs. (Bring water to a boil, add eggs, bring to a boil again, then turn off the heat and let sit in water for about 12 minutes).
    • Remove the eggs, drench them in cold water, and remove the shells.
    • Slice the eggs in halves.
  6. Plating:
    • Plate all boiled foods on a shallow dish.
    • Place boiled eggs on the provisions, bananas, plantains, boiled cakes, fish, pigtails, and salted pork.
    • Pour the tomato sauce over everything.
