  • 1 pound of tamarind pods (Amazon)
  • 2 cups of granulated sugar

Belizean Tamarind Balls Instructions:

  1. Shell the tamarind pods and remove the inner pulp. Discard the seeds and any hard fibers.
  2. Place the tamarind pulp in a bowl and add 1/2 cup of water. Mix well and let it soak for 30 minutes.
  3. After 30 minutes, use your hands to squeeze the pulp and remove any remaining seeds or fibers. Discard them.
  4. Add the sugar, cinnamon, and cloves to the tamarind pulp and mix well.
  5. Use your hands to form small balls, about 1 inch in diameter. If the mixture is too sticky, you can wet your hands with a little bit of water.
  6. Place the tamarind balls on a plate and let them dry for several hours or overnight.
  7. Once the tamarind balls are dry, store them in an airtight container at room temperature.
