Bimecacule is a traditional Belizean dessert that is rich, creamy, and infused with the warm flavors of cinnamon, nutmeg, and vanilla. This sweet rice dish is a delightful treat for any occasion. The preparation is similar to rice pudding but it is not baked. Bimecaule is slowed stirred until done which can take up to an hour and twenty minutes.

Belizean Bimecacule Recipe Ingredients

  • 3 lbs of Uncooked Rice
  • 1 lb Brown Sugar
  • ½ Stick Butter
  • 2 Cans of Coconut Milk
  • 1 ½ Cans Condensed Milk
  • 1 Tsp Cinnamon Extract
  • 1 Tsp Nutmeg Extract
  • 2 Tsp Vanilla Essence
  • 1 Cup Water
  • Ginger, grated
  • Pinch of Salt

How to make Belizean Bimecacule Recipe

1. Prepare the Rice:

  • Soak the rice in water for one hour to soften.

2. Caramelize the Sugar:

  • In a large pot on medium heat, caramelize ½ cup of sugar until it’s golden brown. This will add a rich flavor and color to the dessert.

3. Mix Wet Ingredients:

  • To the caramelized sugar, add the coconut milk and water. Stir well to combine. Then add the condensed milk, remaining brown sugar, cinnamon extract, nutmeg extract, vanilla essence, and a pinch of salt. Mix everything thoroughly to ensure the flavors meld together.

4. Cook the Rice:

  • Stir in the butter and grated ginger, then bring the mixture to a boil. Add the soaked rice and continue stirring constantly to prevent sticking. Cook until most of the liquid has been absorbed and the rice is tender.

5. Final Steps:

  • Reduce the heat, cover the pot, and let the rice soak for 20 minutes, stirring once or twice until it’s fully tender. After cooking, allow the bimecacule to sit for another 20 minutes to cool and set before slicing and serving.
